I just fucking love tomato soup, and of course, when it comes to me I know how to ruin even the most healthy food recipes. Tomato soup is, obviously, made of tomatoes and can be enjoyed hot or cold, smooth or with chunks, with cream or with chicken stock. Wikipedia tells us that it is usually enjoyed with sour cream or croutons, but I have to admit my absolute favourite on top is pesto and mozzarella, and preferably with some good bread (hot, salty, garlicy foccaccia).
But now, I will share my quick "what happens to be in my fridge/cupboards"-recipe for tomato soup à la Jassu. I made a small soup this time, usually I would use the whole can (and yes, I've actually found the ready canned tomatoes better than "the real stuff").
Tomato soup à la Jassu
½ can of tomatoes (Polpa di Pomodoro, from Lidl)
1 slice of melted cheese (cheddar)
two teaspoons of butter
lots of garlic, black pepper, basil, salt
two teaspoons of pesto on top

Take a small pot, throw the tomato mash thingy in there, and while heating it up add the cheese, butter, and seasonings. Heat it up 'til it's about to boil, or long enough for the cheese and butter to melt. Pour on a plate, throw in as much pesto as you like, and just enjoy.
